Spinach and Leek Soup.

RECIPE BY Optium Health the Paleo Way by Claire Yates.

Serves 6:

2 tablespoons butter                                                                       
2 leeks roughly chopped
3-4 cloves garlic roughly chopped
4 sticks of celery rough chopped
½ small head cauliflower rough chopped
2 medium heads of broccoli, stem included yup… roughly chopped
8 cups vege stock
2 large handfuls of spinach, roughly chopped
I large handful of flat leaf parsley again roughly chopped
Pinch of nutmeg
Ground black pepper
1 tablespoon of coconut cream (or dairy cream) to garnish

Heat the butter in a pot on medium heat. Add the leek and garlic and cook until the leek is soft but not brown. Add the celery, cauliflower, and broccoli and cook for a further 5 mins. Add the vege stock and bring to the boil, then turn down the heat and simmer for 10-15 mins or until the cauiliflower and broccoli are soft. Add the spinach and parsley and take off the heat ( you want them to retain their bright green color).Blend the mixture to a smooth consistency using a hand blender. Add nutmeg and pepper to taste)

Serve with a dollop of coconut cream and a sprinkle of parsley.
