RECIPE BY From the book Optimum Health the Paleo Way by Claire YATES.
Pre Heat oven to 180C or 350F – Bake 15 – 20 mins. Serves 2-4
1 cup of raw almonds
1 cup of raw cashews
1 Tablespoon dried oregano
5 sprigs of flat leaf Italian parsley finely chopped
¼ tsp bicarb of soda
Pink Himalayan salt to taste
Ground Black pepper
Food process the nuts and pulse to a fine crumb.
Stir in the remainder of the ingredients.
The mixture should be moist.
Turn out the mixture onto a flat surface lined with baking paper and place another layer of baking paper over the top.
Roll out to about 2-3mm in thickness.

A LITTLE SOMETHING FOR THE TOPPING – Make before putting the topping on.
½ c raw cashews
6 marinated artichoke pieces
3 Tablespoons olive oil
1 large handful of basil leaves
½ long red chilli, seeded
1 clove of garlic
Pinch of Himalayan salt and ground black pepper
Puree all in a food processor or blender.
Add more oil if required.
PREPARE: Fry/Grill 1-2 bacon rashers (nitrate free) and roughly chop.
Steam 1 cup of cubed pumpkin/butternut
Spread 2-3 Tablespoons of Tomato Paste evenly over the base
Then other toppings: small red onion finely chopped
10 small pieces of free range salami
½ red capsicum and ½ yellow capsicum finely chopped
¼ zucchini finely chopped
5 pieces of marinated artichoke roughly chopped
1 long red chilli, seeded and finely chopped
Then on top of all of that – 6-7 pinches of goat’s feta (omit if you are sensitive to dairy)
And small dollops of Basil Feta (and maybe some broken up Basil leaves)
