Apple and Orange Spice Crumble.


RECIPE BY From the book Optimum Health the Paleo Way by Claire YATES.

Ingredients:

3 Large Granny Smith Apples
Zest, Juiced and chopped segments of 1 orange
1 tsp Vanilla Extract
(1/2 C blueberries if you want)

Topping:

3 Tbsp Coconut Oil
3/4 C Almond Meal
1/2 C Almonds chopped up*
1/2 C Macadamia Nuts chopped up*
1 Tbsp Mixed spice or ginger
1/2 Tbsp cinnamon
Zest of 1 Orange

*make sure nuts are raw, not roasted otherwise they will burn

Method

Preheat oven to 180 degrees

Cut apples into generous chunks and combing with the orange juice, zest and segments, the blueberries if you choose top and the vanilla extract. Mix

Put in an oven proof dish

For the topping, rub the almond meal, cinnamon, and coconut oil together to make crumble-like consistency, using a fork to mash together. Add the rest of the ingredients, mix well

spoon onto the fruit and cover with tin foil

Cook for 20-30 minutes (depending on apple size), remove foil and cook for another 10 minutes or until the top is crunchy

Serve hot with Greek Yoghurt, or some coconut cream
