Tumeric Mashed Pumpkin Salad.

 

RECIPE BY Vicki’s “on a whim with left overs”

A cheeky wee number to tantalise your tastebuds!

Ingredients

Half pumpkin
1 tsp of Turmeric – adjust to your taste-buds
Red Onion- thinly sliced
Tomato chopped
Avocado chopped
Celery thinly sliced
Good handful of pistachios chopped finely
Pepper and Rock salt

Method

Pumpkin skinned chopped and microwave until soft, or roast in oven
Then mash it up with Turmeric
Add remaining ingredients.
