Christmas Custard

Fruit and Custard Pots (makes 1 ½ cups)(-this is dairy free.

 

Dr Libby states that the husks and the nuts provide beneficially high amounts of dietary fibre which helps us to feel full.

Fibre is also critical for healthy digestion and elimination for clear skin, energy and vitality)

 

  • ½ cup coconut cream
  • ⅔ cup cashew nuts (soaked overnight then rinsed well)
  • 1 tsp vanilla paste (usually found in most supermarkets)
  • 2 tablespoons maple syrup
  • ½ tsp lemon juice
  • 1½ tablespoons psyllium husk
  • Pinch of salt

 

Combine all ingredients in a high speed blender and blend until creamy.Pour into individual ramekins and top with fruit(I like to layer this with fruit or combine it within my trifle!!)
